Potatoes Scampi July 16, 2009

What you need:

baby potatoes (I used yukon gold.)

olive oil

seasoning salt

3 or 4 cloves garlic, crushed

heavy duty foil

Wash the potatoes and put them on a large sheet of heavy duty foil. Then spinkle on olive oil, seasoning salt, and garlic. Mix the ingredients to make sure even coverage. Bring the long sides of the foil together and roll up. Then roll up each end to seal the foil into a packet. Put the potato packet on a grill with direct heat. After 15 minutes, turn packet over. Cook until tender. The cooking time will very depending upon the heat of the grill and size of the potatoes. It will take approximately 30 or more minutes. Tip- If you take them out of the foil and discover they are not tender- just put them back in the packet and back on the grill or put them in a microwave safe bowl and cook until tender.
